I have not been to a Red Robin since I was a little girl. I used to go there with my Daddy and we would both order a Burger & Fries with a Chocolate Shake on the side! Those were some great times! I am definitely a Daddy’s Girl!
My boyfriend and I went out for a nice lunch this past Friday at Red Robins. I have to admit that it was the BEST lunch that I have had in a long time. Who would have thought right? I really enjoyed the atmosphere and the service was EXCELLENT! Thumbs up Red Robin!
They were very accommodating to people with food allergies!

You can substitute any bun for a Gluten-Free Bun for only $1.00! That is the cheapest upcharge that I have seen here in Houston so far! AMAZING!
All of the burgers are served with their famous BOTTOMLESS Steak Fries which are Gluten-Free as well! They also have tons of delicious Gluten-Free sauces that you can dip their tasty fries in. It has been so long since I have had fries! I was in pure heaven! I totally forgot about my Turkey Burger… Haha! Oh well!
My boyfriend and I both enjoyed our experience at Red Robin and we were both extremely impressed as well! They were very accommodating to my Gluten-Free Diet! We will be back again very soon!

I have been having a hard time finding these tasty delectables in grocery stores by me but yesterday I spotted them at my local, neighborhood “Walmart Marketplace.” And yes, my eyes definitely lit up like a “little kid in a candy store!” :-) There is nothing more exciting to me than finding a new Gluten-Free item, especially one that brings back such great childhood memories. I am completely IN LOVE with Kellogg’s NEW “Gluten-Free Rice Krispies” made with Brown Rice! They are delicious and I even had to have me a second bowl this morning because the first one just wasn’t enough. I may be tiny, but when I love something… then I can certainly put away a serious amount of food! I love to sprinkle a little packet of Stevia on top then drown the cereal in 2% milk… pure perfection I must say! I am a big “texture person,” especially when it comes to cereal and the texture of this cereal is phenomenal and of course you can’t go wrong with the “SNAP, CRACKLE & POP!” Haha! My Mother just couldn’t wait to text that to me when I found these in the supermarket yesterday and sent her a picture. She is adorable!
If you have yet to try the NEW Kellogg’s “Gluten-Free Rice Krispies” then make sure you run down to your local, neighborhood “Walmart Marketplace” and snag you a box. I promise that you will be in heaven!
Life isn’t always fair…
(The other side of “My Gluten-Free Life”)
I have to admit that I have a lot of health issues. But, that is something that I unfortunately have no control over. My health is the most important thing to me as it should be to everyone, so why should I be penalized for that?
Having a lot of health issues means I have a lot of doctor appointments to attend as well. I was just recently let go from my job for excessive absenteeism. I have worked in the Wedding & Event Industry ever since I graduated from High School. I am a very driven woman and I have worked extremely hard to get to where I am today. Being a good employee is very important to me and I always try my best to reach my up most potential at anything and everything that I do. I have never once missed work without having a serious and valid reason for doing so. My reasoning’s have been due to important doctor’s appointments so that I could meet with my specialists or because I was extremely sick due to new medications that my body takes time to adjust to. It is hard to be let go for something that you have no control over… life just isn’t fair is it?
I pride myself in being a very strong woman and I know that I will make it through this. I am an extremely talented woman and I wish that more people would take the time to see the positive in me instead of focusing on the negative. Give me a chance to prove myself so that you will realize that I will be a huge asset to your company regardless of my absenteeism due to my health issues. I promise that you will not regret your decision!
I have set goals for myself that I wish to accomplish and dreams that I want to live out in my lifetime. I will not let my health issues hold me back and I will continue to push on. Life isn’t always fair… and being me isn’t easy!
I have amazing ideas and I hope to open my own business one day where I can help other people like me! This is not the last of me!
My First Tattoo…
On Saturday, I got my very first tattoo to forever remember the phenomenal moment that I experienced on September 9th, 2012. When I turned to step away from visiting my Grandma’s gravesite, I was immediately surrounded by a swarm of beautiful butterflies from my head all the way down to my toes. I felt my Grandma’s warm, soft embrace around my entire body! Now, she will be with me forever…
and so will that feeling!

UPDATE… On my back!
So… yesterday I went to go see a “Spine Specialist” regarding my recent diagnosis of Arthritis of the Spine after referred to her by my Internal Medicine Doctor.
After the physical exam and review of my x-ray, she determined that I also need to get a scan done on my neck as well. The pain in my neck has been increasing and I am unable to fully move it. She started off by placing me on Gabapentin, an anti-epileptic medication. It affects chemicals and nerves in the body that are involved in the cause of seizures and some types of pain. It is also used in adults to treat nerve pain. I will be taking this medication on top of my already prescribed anti inflammatory and pain medication, muscle relaxer and extra pain medication. I have a large amount of pinched nerves in my back caused from the arthritis and this medication was given to me to relieve the pain caused from the nerves. Then, she prescribed me Physical Therapy in the form of Aquatic Therapy and eventually moving to land. I will be starting this physical therapy next week, so I am anxious to find out if it is helpful. I was also told to consider getting Epidural Steroid Injections which are a common treatment option for many forms of low back pain and leg pain. This is very scary to me! Eeekkk! And last, after reviewing my pain after all of those options… surgery will be my last resort.
I would like to reach out to my fellow readers and find out your opinions on this issue… Has anyone taken Gabapentin before? Been through Physical Therapy for back issues? Received Epidural Steroid Injections? Had Spine Surgery? I have been doing a lot of research on these issues… because that is just the type of person that I am! Haha! But, I am curious to find out your opinions and information on the subject!

So, I am pretty new to this whole “food truck” business but I decided to find out what the scene is like here in Houston. I am “Gluten-Free” which makes it even more tough to find a food truck that I can actually try out. But…. I did happen to stumble upon this little hidden gem… “Monster PBJ.” Their all-vegetarian menu is vegan-friendly plus they even offer gluten-free bread and chips! Pretty awesome right? As soon as I saw that, they had my full attention and I had to try them out ASAP!
My boyfriend and I had to go to a wedding this past weekend, so on the way we decided to stop by the Menil Collection here in Houston where the “Monster PBJ” truck was parked for that afternoon. Their menu is written on individual brown paper sacks and you build your order right on the bag itself. Cute right? First, you choose your size: Junior, Classic or Monster… I chose the classic of course! I am not a wimp, so the junior was out but I am not afraid to admit that I can’t eat a monster either! Haha! Then you choose your bread: White, Wheat or Gluten-Free White… I chose the Gluten-Free White of course! Duh! Then you choose your Nut Butter: Almond, Cashew or Peanut… you can choose 1 or 2 but I decided to go with the classic Peanut Butter all by itself. Then you select your fruit: Blueberry Jam, Grape Jam, Strawberry Jam, Sliced Apples, Sliced Bananas, Sliced Strawberries… you can choose 1 or 2 so I decided to go for it all and get 2! I went with the Strawberry Jam and Sliced Strawberries. Both excellent choices in my opinion! Plus, all of their jams are sourced locally… yum! And next you can choose Sweet or Spicy: Agave, Honey, Nutella or En Fuego (Spicy)… and since I can’t have any of those except for maybe the Agave, I decided to keep it simple and not add anything at all. Then, they ask you if you would like it “Panini Grilled” so I looked at the guy, smiled and asked “Do I want it Panini Grilled?” and he said “Absolutely!” Then lastly, they ask you how you would like it sliced (very cute option): in half or in triangles… my boyfriend knew I loved my sandwiches cut in triangles so he answered that question for me! Haha! Yes, I am still a little kid at heart!
I must admit that their Gluten-Free White Bread was phenomenal! I have never tasted Gluten-Free bread with that much flavor and it also had such a great texture. The Peanut Butter had the perfect consistency and the strawberries were extremely sweet and fresh… the perfect touch to this sandwich. And lastly, the Strawberry Jam was my favorite! It had the perfect texture and the flavor was spot-on!
I really enjoyed my visit to the “Monster PBJ” truck located right here in Houston, Texas. If you have yet to visit this hidden gem, then you are really missing out! Go check them out!
I love to research and find different pasta salads that I can throw together so that I have something healthy and tasty to take for lunch during the work week. I love tuna and I love it prepared many different ways! I am a huge Pinterest fan and I happened to stumble upon this awesome recipe last week. The “Gluten-Free Mediterranean Tuna Pasta Salad” and it is very delish! In order to make it “Gluten-Free,” I used brown rice pasta. I love how simple this recipe is yet it is packed full of flavor. It is also a very colorful salad and very pleasing to the eyes! I found this great recipe and colorful picture on Linda RD’s Blog. If you want to find some more healthy dishes like this one, then go check out her blog! Of course, I had to add my little “touch” to this recipe, so I decided to add a little red wine vinegar to add a little “twang.” And… of course I made the right decision! Pure perfection! Oh, and by the way, I used 2 cans of tuna for this recipe!
Here is the recipe:
420 Calories 2.5g Saturated Fat 17g Protein
2 cans (5 oz each) drained or 1 pouch (5 oz or 6.4) oz tuna 1 pound dry small pasta shells 1 jar (7.5 oz) artichoke hearts, drained and quartered or frozen package 1/4 cup capers, drained 1/2 cup chopped Kalamata olives 1 teaspoon lemon juice 1 tablespoon finely grated lemon zest 1/2 cup extra virgin olive oil 1/8 teaspoon ground black pepper 20 cherry tomatoes, halved 1/2 cup chopped fresh Italian parsley
Prepare pasta according to package directions. Set aside. Combine tuna, artichoke, capers, olives, lemon juice, olive oil, black pepper, tomatoes, and parsley. Add pasta shells to tuna mixture and toss. Garnish with fresh parsley
Linda finds that many of her clients ask about pasta salads which they love – “I say add some protein like tuna and then it can become a complete meal. Make sure that you are getting the equivalent of at least 3 ounces of tuna per person. You might want to add more tuna than the recipe calls for.”
Gluten-Free Mediterranean Tuna Pasta Salad
So.. I have to admit that one of my favorite things in life is GARLIC! Haha pretty scary huh? Trust me, my boyfriend teases me enough about it. It is just one of those addictive flavors that leaves you always wanting more. What is better then that right? One of my all time favorite restaurants is the “Columbia Restaurant” located in St. Augustine, Florida where they serve their FAMOUS “1905 Salad!”
I will be taking my boyfriend to St. Augustine in May of next year but I could not wait until then for him to try this amazing salad. Heck, I couldn’t wait to have it again myself! So, I decided to throw it together really quick last night… and WOW! I was so impressed with myself because it turned out amazing… PURE perfection! I did make a couple of changes, because I always like to add my little “touch” to every recipe that I make. I can’t have red meat so I added oven roasted chicken breast in it’s place and cut into thin strips and I also don’t like green olives… so I just left them out! But, I did add some red onion which added a nice extra flavor to this salad.

Columbia Restaurant’s “1905″ Salad
Yield: 4 servings
Prep Time: 15-20 minutes
Total Time: 15-20 minutes
A delicious Cuban salad with an incredibly addicting garlic dressing… it will have the crowd begging for more!
For the “1905″ Dressing: 4 garlic cloves, grated 1 1/2 teaspoons dried oregano ⅛ cup white wine vinegar 1/2 cup extra-virgin Spanish olive oil (Cold-Pressed) Salt and pepper to taste
For the Salad: 4 cups iceberg lettuce, broken into 1 1/2″ × 1 1/2″ pieces 1 ripe tomato, cut into eighths 2/3 cup baked ham, julienned 3/4″ × ⅛” (may substitute turkey or shrimp) 2/3 cup Swiss cheese, julienne 2″ × ⅛” 1/2 cup pimiento-stuffed green Spanish olives 2/3 cup Romano cheese, grated 1 lemon 2-3 tablespoons Lea & Perrins Worcestershire Sauce® “1905” Dressing (recipe above)
For the “1905″ Dressing: Add the garlic, oregano, and white white vinegar to a small glass measuring cup and whisk until combined well. Slowly drizzle in the olive oil and whisk vigorously until well combined. Season with a pinch of salt & pepper (to taste). Best to make 24 hours in advance to allow flavors to meld.
For the Salad: Add lettuce, tomatoes, ham, swiss cheese, and olives. When ready to serve, add the Romano cheese, squeeze the juice of the lemon over the salad, splash on the worcestershire sauce and then add the dressing and mix until well combined. (I ended up having a little reserved dressing – lunch tomorrow!) Serve with some hot crusty bread.
…a little update about “me!”
I have been dealing with serious back pain for years now but I always thought that it was due to my very severe Endometriosis. But, here recently I noticed a large, bulge of inflammation has formed at the bottom of my spine. Also, my back pain has started to increase. I noticed that it was interfering with my sleep and it became very stiff when I remained inactive for a period of time. So, finally I decided to take a trip to my doctor to find out what is going on. She did an exam on my back and also took some XRAYS of my spine. I received my results and I found out that I have Arthritis of the Spine and my disks in my back have been slightly smashed and there is no longer cushion provided for them. I am going to be transferred to a specialist where I will find out more information about my condition and also start physical therapy soon so that I can start moving these joints around more. Right now, I am taking a very large pain medication that will also help with the inflammation along with the pain of course and a small muscle relaxer as well. Like I don’t have enough problems already right? Ugh! It is never ending… BUT I am a very strong woman and I know that I will continue to push on! And I’m out…
I have always loved “Michael’s Cookie Jar” located right here in Houston, Texas but when I found out that I was Gluten-Free… so, that love faded away of course. But, my love for them is starting to grow again because “Michael’s Cookie Jar” offers a few Gluten-Free options as well for people like me! Pretty cool right? I decided to stop in one afternoon and sample what they had to offer. I purchased the “Gluten-Free Oatmeal Raisin Cookies” (which come in a pack of 2) and the “Decorated Gluten-Free Cutout Cookie” as well. I am not a big fan of sugar of course, so the decorated cookie was not my favorite. I would have loved it, if it didn’t have the frosting on top because the cookie itself had a wonderful texture and flavor to it. However, I must admit that I fell in LOVE with the “Gluten-Free Oatmeal Raisin Cookie!” WOW! It had a wonderful flavor and the little raisins were the perfect added touch to this cookie. Usually, I must admit that I am not a big raisin fan but I really enjoyed them in this cookie. These cookies are perfect for a breakfast treat and I was very impressed with the texture. Way to go Michael!
I will definitely be back for some more Oatmeal cookies… and soon! If you have yet to sample “Michael’s Cookie Jar” because you were unsure about their “Gluten-Free Options” then go stop in. Because… now you know! Be sure to let them know that I sent you!
